My sister suggested this healthier recipe when I showed her a similar one with scads of mayonnaise and cheese. I finally made it in the midst of decluttering this morning since I'd purchased all the ingredients last week (and left them laying on the counter in the kitchen) and it was just as quick to make the dip as to put all the stuff away. LOL
1 jar roasted jalapeno peppers (drained) 1 jar artichoke hearts in water (drained) 2 tablespoons chopped garlic (I used the stuff in the jar) a small amount of olive oil (I used what was left in the bottle - probably less than 1/4 cup) a pinch of salt a bit of lemon juice (I used lime juice because someone else used up my lemons)
Put it all in a food processor and pulse. She suggested having it with raw veggies rather than chips or crackers to save even more calories.
